Based in the mountains of Kochi, Japan, Tosa Ryu have been handcrafting pieces for the home from local hinoki wood since 1960.

Hinoki is a Japanese cypress prized for its lightness and lovely pine fragrance, making it the cutting board of choice for sushi chefs, as the soft, oil-rich wood is easy on knife blades and naturally anti-microbial and mold-resistant. Each board is cut from a single, solid piece of hinoki and contains no glues or additives of any kind. Lightly dampen before each use to prevent staining of the light wood, and make sure the board is completely dry before storing.
