We are often asked, what is the difference between cooking in a donabe compared to a Dutch oven? 

Donabes have a slower rise to peak temperature and hence the umami and inherent sweetness of the ingredients are gently coaxed out of them, without breaking the food’s structure. The donabe also stays hotter for much longer due to the petalite, allowing for a more gradual cooling process.
